Easy N Simple Vaangi bhath (brinjal rice)


I love Brinjal/Eggplant/Aubergine in all forms and particularly when sauteed n mixed with rice is my favorite. As the traditional Vaangi bhat recipe involves more time and also a lengthy preparation I always prefer this Brinjal rice. To me, this  is very simple and quick Brinjal rice/Vaangi Bhat. And is one of my H's favorite lunch box recipe. This rice recipe requires very simple/common ingredients with few Indian spices. This Brinjal rice doesn't require any special side dishes, simple potato chips/papad or pickle is enough. The recipe as follows...



Ingredients
  1. Brinjal (small purple color)    5no.s
  2. cooked rice       1 cup
  3. onion  (chopped)   1 medium 
  4. tomato (chopped)     1(small size)
  5. dry red chillies       2no.s
  6. turmeric powder    a pinch
  7. chilli powder    1 tsp
  8. coriander powder       1 tsp
  9. cumin powder   1/2 tsp
  10. garam masala     1/2 tsp
  11. mustard seed       1/4 tsp
  12. chanadal         1/2 tsp
  13. urad dal    1/2 tsp
  14. hing          1/2 tsp


Method
  • Heat a pan with oil and add mustar seeds when they pop add chana dal ,urad dal,red chillies and hing.
  • fry for few minutes and add chopped onions and saute until golden brown.
  • Now add the cut brinjal (length wise) and turmeric powder
  • Fry for 5 mintues or until the brinjal  get sauted nicely .
  • now add the chopped tomatoes along with chilli powder,cumin powder,coriander powder and garam masala
  • Mix well until the brinjal nicely coated with the masala
  • Add 1/4 cup water ,salt  mix well and close it with a lid
  • Let it stand  till the brinjal gets cooked .(the masala should not be too watery )
  • Now add the cooked rice and mix well with the brinjal masala
  • Garnish with coriander leaves,now the brinjal rice is ready to eat .

  2. Love Vaangi bhaat! I usually cook rice with the eggplans (add washed rice to the tadka and cook together) and use tamarind pulp instead of tomatoes. I like your version with urad and chana daal. will try that next time!
